Gâteau aux carottes

250g caster sugar or brown sugar
12 tablespoons vegetable oil
275 g flour
2 tablespoons level teaspoon cinnamon powder
1/2 teaspoon baking powder
1 teaspoon vanilla extract
2 pinches of salt
3 pinches of powdered nutmeg
3 pinches of spice mix
4 (if you do not have one, it does not matter) 4 or 5 (375g) carrots

Preheat oven to 160 ° C (gas mark 5).
Peel the carrots and grate finely.
In a bowl, mix with a whisk, sugar, eggs and oil. Whisk for 1 to 2 minutes.
Add all other ingredients (except carrots) and whisk the mixture for 1 minute.
Finally, add the carrots and mix to a smooth paste. Butter the pan and pour the mixture.
Cook about 45-50 minutes and let cool before unmolding. Once cooled, you can cover it with frosting cream cheese.
With or without this step, leave the cake carrots in the refrigerator at least 12 hours.
